Description
This recipe is only few ingredients with 50/50 mix of beef and pork mince. Recipe comes from Nat's What I Reckon on YouTube.

Ingredients
- 1kg of Minced Meat (half pork half beef)
- 500g of pasta
- 250g of Bacon (Middle rasher) or Pancetta
- 1 Large Onion
- 2 Carrots medium
- 2 Celery Sticks
- 2 Cups of Beef Stock
- 1 Cup of White Wine
- 1 Cup of Milk
- 2 Tubs of Tomato Paste (I use concentrated reduced salt)
- Fresh rosemary or other herbs like bay leaves f you like (optional)
- Pinch of salt and some cracked pepper
Directions
- Dice all the vegetable, bacon and put in one bowl
- Put some butter and splash of olive oil in bigger pot
- Fry off vegetable, bacon and add mince meat slowly to the pot
- Cook mince meat until all the liquid has evaporated. You can use a whisk to break mince equally
- Add some rosemary if you have as it adds nice aroma and flavor to sauce
- After all the liquid has evaporated add some wine
- Add tomato paste after alcohol has evaporated. About 2 or 3 minutes later
- Next add a cup of milk and stir
- Add stock next, pinch of salt and some cracked pepper
- While sauce is cooking about 10 or 15 minutes before it's finished boil some water with salt for pasta If packet says to cook pasta for 12 min it's better to cook it for 11
- When the pasta is cooked leave some pasta water on the side and drain off the rest
- Add pasta back on to the stove, add bolognese sauce to it and a bit of pasta water
- When it's all mixed in remove from the stove and serve
